Recipes provided by the Community Food Development Worker (CFDW) at Clackmannanshire Healthier Lives (CHL). CHL is a community based health improvement project. For more information please phone Signpost Recovery on 08456731774 and ask for the CFDW or email on deborah.ross@nhs.net Ingredients: 3 eggs Paprika or black pepper to taste 1 dessertspoon of olive oil Fillings – Choose from grated mature cheddar, sliced ham, cooked chicken, chopped peppers, sliced mushrooms, spinach or chopped tomatoes.

How to cook: - Break eggs into a bowl, remember to wash your hands after handling raw eggs - Whisk with a fork, add some paprika or pepper if you want - Heat oil in a small frying pan over a medium heat.

- When oil is hot, add chopped vegetables and meat, stir with a fork for 1 minute.

- Add the egg mix, stirring constantly with the fork for another 30 seconds.

- Add the cheese and flatten out with the back of the fork - Cook until the base is slightly brown, then flip 1 half over the other to make a ‘D’ shape.

- Cook for 30 seconds, flip over until cooked through Recipe Tip: Omelettes are a great way to use up any leftovers in your fridge.

Health Tip: When using oil try to measure it using a spoon – pouring oil ‘freehand’ can often result in you adding more than you need!
