Serves 3 Ingredients 1 onion, 1 courgette, 1 red or yellow pepper, 5 mushrooms 2 teaspoons garlic puree 2 teaspoons Cajun or fajita spice 1 small can chickpeas (drained and washed) 6 tortilla wraps 1 carton passata 8 dessertspoons grated mature cheddar cheese 1 dessertspoon mixed herbs 1 dessertspoon olive or vegetable oil How to make Pre-heat oven to 180 °C or gas mark 4 Wash, peel, chop vegetables Heat oil in deep pot, add chopped vegetables – cook until soft Add garlic puree, chickpeas and Cajun or fajita spice – cook for 10 minutes on a low heat Remove from heat and set aside Lay tortillas on work surface, divide filling equally between them. Roll up and place in casserole dish, pour carton of passata over wraps – finally sprinkle with grated cheese and herbs Bake in the oven for 15-20 minutes or until golden brown Recipe tip – You can substitute the chickpeas for chicken, pork or beans. Health tip – Fill yourself up by adding plenty of vegetables to the enchiladas. Also, be aware of how much cheese you sprinkle on top, especially if you are watching your weight.
