Ingredients 2 leeks 2 potatoes 1 carrot 6 mugs of water 1 vegetable stock cube Black pepper to taste How to cook Wash, peel and chop vegetables Put water in a large pot, add stock cube and vegetables Bring to the boil on a high heat, then boil for 5 minutes Reduce heat, simmer for 20-30 minutes and stir occasionally Soup is cooked when potatoes are soft. Add black pepper to taste Recipe tip: Add some chopped, cooked chicken to make cock-a-leekie soup.

Health tip: Eating soup regularly is a great way to get more vegetables into your diet. Remember to aim for five pieces of fruit and vegetable a day.
