Recipes provided by the Community Food Development Worker (CFDW) at Clackmannanshire Healthier Lives (CHL). CHL is a community based health improvement project. CHL can offer support and advice to enable you to make changes that can improve your health and well-being. For more information please phone Signpost Recovery on 08456731774 and ask for the CFDW or email on deborah.ross@nhs.net Ingredients: ½ mug red lentils 2 carrots ¼ turnip 2 medium potatoes 1 small onion or leek 4 or 5 mugs of water 1 stock cube, any kind Black pepper to taste How to cook: - Wash, peel, chop vegetables.

- Rinse lentils in sieve under cold water.

- Place large pot on high heat, add water, chopped vegetables, lentils and stock cube.

- Bring to the boil, reduce heat to medium and cook until all vegetables are soft.

- Soup can be served chunky or use a hand blender to make smooth.

- Add black pepper to taste Recipe Tip: Try adding a large tin of chopped tomatoes and a teaspoon of chilli flakes to make it spicy.

Health Tip: Lentils can be very filling, and using them to cook can act as a great, ‘low fat’, high protein substitute for meat.
